Pavakkai / Bitter Gourd With Coconut Kuzhambu

Pavakkai - 3(small size), Oil , Mustard seeds - 1/2 tsp, Onion - 1/2 chopped, Tomato - 1, Green chilli - 2, Curry leaves, Shredded coconut - 1 1/2 tbsp, Fried gram - 1 tbsp, Tamarind - (small gooseberry size), Salt, Curry masala powder - 1 1/2 tbsp, Garlic - 2 cloves, Ginger - small piece

In a blender, add coconut, fried gram, tamarind, ginger, garlic, curry masala powder and blends into fine paste. Keep aside.
Heat the pan with oil, add pavakkai and deep fry it or until it becomes golden brown. Keep aside.
Heat the pan with oil, add mustard seeds when it splutters, add onion, green chilli, curry leaves, saute well until onion turns to golden brown. Add tomato, saute well and cook for a minute.
Add the fried pavakkai, turmeric powder, salt and saute well for a minute.
Add the masala paste, 1 cup of water and adjust the kuzhambu consistency and cook for 15-20 minutes on the medium flame.
Cook until the kuzhambu become thick.
Pavakkai With Coconut Kuzhambu is ready to serve with rice.
