Beetroot Poriyal

Beetroot - 1, Oil - 1 tbsp, Mustard seeds - 1/2 tsp, Urad gram - 1 tbsp, Onion - 1/4, Green chilli - 2, Curry leaves, Salt, Shredded coconut - 1/4 cup

Get all the ingredients ready.
Heat the pan with oil, add mustard seeds when it splutters, add urad gram, green chilli, curry leaves, onion and saute well until onion turns to golden brown.
Add beetroot, salt and saute well for 30 seconds.
Add 1/4 cup of water & saute well. Close the pan with lid and cook for 10 minutes.
Add the shredded coconut and mix well.
Let it simmer for a minute on medium flame.
Beetroot Poriyal is ready to serve.
