Poosanikkai / Pumpkin Sambar


Ingredients
Poosanikkai - 1 cup (chopped), Oil - 1 tbsp, Mustard seeds - 1/2 tsp, Onion - 1/2, Tomato - 1, Green chilli - 3, Curry leaves, Sambar powder - 1&1/2 tbsp, Turmeric powder - 1/2 tsp, Salt, Tamarind water - 1&1/2 tbsp,Malli / Coriander leaves, Toor gram - 1 cup, Garlic - 3 cloves


Method
Get all the ingredients ready.
Pressure cook the toor gram with 3 cups of water along with turmeric powder, 1 tsp of oil and 3 garlic cloves. Keep aside.
Heat the pan with oil, add mustard seeds when it splutter, add green chilli, curry leaves, onion, saute well until onion turns to golden brown and add tomato.
Add salt, turmeric powder, a pinch of hing and saute well for 30 seconds. Add pumpkin, sambar powder and saute well.
Add 1 cup of water and cover the pan with lid. Cook it for 10 minutes or until the pumpkin turns soft.
Add 3 tbsp of tamarind water, mix well and cook for a minute.
Add the cooked toor gram, mix well and let it simmer for 5 minutes on the medium flame.
Garnish the coriander leaves.
Poosanikkai / Pumpkin Sambar is ready to serve with rice, idli and dosa.
