Kovakkai / Tindora Puli Kuzhambu

Kovakkai - 10, Oil - 3 tbsp, Onion - 1/2 chopped, Garlic - 3 cloves, Red dry chilli - 4, Tomato - 1, Curry leaves, Sambar powder - 2 tbsp, Tamarind puree - 3 tbsp, Mustard seeds - 1/2 tsp, Turmeric powder - 1/4 tsp, fenugreek seeds - a pinch, Salt

Get the all ingredients ready.
Heat the pan with oil, add kovakkai and saute 5 minutes and keep aside.
In a same pan add mustard seeds when it splutters, add garlic, onion, red dry chilli, curry leaves, & saute well until onion turns to golden brown and add tomato , saute well for 2 minutes.
Add turmeric powder, sambar powder, salt and saute well. Add 1/4 cup water and cook for 5 minutes.
Add fried kovakkai, tamarind puree and add a cup of water to adjust the kuzhambu consistency. Close the pan and cook for 10 minutes on medium flame.
Once, the kuzhambu becomes thick and let it simmer on low flame for 2-3 minutes.
Kovakkai / Tindora Puli Kuzhambu is ready to serve with rice.
