Zucchini with Moong Gram Curry

Moong gram - 1 cup, Zucchini - 1, Pearl onion - 6, Tomato - 1, Green chilli - 2, red dry chilli - 2, Cumin - 1 tsp, Curry leaves, Malli/Coriander leaves, Oil, Mustard seeds - 1/2 tsp, Hing - a pinch, Salt, Turmeric powder - 1/2 tsp, Sambar powder - 1.5 tbsp

Get all the ingredients ready.
Dry roast the moong gram and pressure cook the moong gram along with 1/4 tsp of turmeric powder, 1 tsp of oil for 3 whistles. Keep aside.

Heat the pan with oil, add mustard seeds when it splutter, add cumin, red dry chilli, curry leaves, onion, saute well until onion turns to golden brown and add tomato.
Add salt, turmeric powder, a pinch of hing and saute well for 30 seconds. Add zucchini, sambar powder and saute well.
Add 1 cup of water and cover the pan. Cook it for 10 minutes or until zucchini turns soft.
Add the cooked moong gram, mix well and let it simmer for 5 minutes on the medium flame.
Zucchini with Moong Gram Curry is ready to serve with rice, chapathi.
