Ingredients
Avarakkai - 15, Oil - 3 tbsp, Onion - 1/2 chopped, Garlic - 3 cloves, Red dry chilli - 4, Tomato - 1, Curry leaves, Sambar powder - 2 tbsp, Tamarind puree - 3 tbsp, Mustard seeds - 1/2 tsp, Turmeric powder - 1/4 tsp, fenugreek seeds - a pinch, Salt

Method

Get all the ingredients ready.
Heat the pan with oil, add mustard seeds when it splutters, add garlic, onion, red dry chilli, curry leaves, & saute well until onion turns to golden brown and add tomato , saute well for 2 minutes. Add avarakkai and saute well for a minute.
Add turmeric powder, sambar powder, salt and saute well. Add 1/4 cup water and cook for 5 minutes.
Add tamarind puree and add a cup of water to adjust the kuzhambu consistency. Close the pan and cook for 10 minutes on medium flame.
Once, the kuzhambu becomes thick and let it simmer on low flame for 2-3 minutes.
