Lemon Pickle | Elumichai Oorugai South Indian Style

Lemon - 4, Sesame oil - 1/4 cup, Mustard seeds - 1/2 tsp, Red chilli - 2 tbsp, Hing - 1 tsp, Red dry chilli - 2, Salt


Get all the ingredients ready.
Wash and cut the lemon into small pieces. Soak it in 2 tbsp of salt for 5 days and stir it twice a day.
After 5 days, heat a pan with 1/4 cup of sesame oil.
Add mustard seeds when it splutter, add hing, red dry chilli, red chilli powder and saute well in medium flame.
Add soaked lemon and saute well. Let it simmer for 5 minutes.
or cook until the oil is floating on the top of pickle on the low flame. Then, cool it completely and stored it in air tight container.
Lemon Pickle | Elumichai Oorugai South Indian Style  is ready to serve.
