Kathirikkai / Brinjal Thokku

Kathirikkai - 1, Oil - 1 tbsp, Mustard seeds - 1/4 tsp, Garlic - 4 cloves, Onion -1/2 chopped, Red dry chilli - 3, Curry leaves, Tomato - 2, Turmeric powder - 1/4 tsp, Salt

Get all the ingredients ready
Heat the pan with oil and mustard seeds. When it splutters add garlic, red dry chilli, curry leaves and onion. Saute well until onion turns to golden brown.
Add tomato, turmeric powder, salt and saute well until tomato becomes soft.
Add kathirikkai and saute well for 30 seconds.
Add 1 1/2 cups of water. Cover the pan and let it simmer for 10-15 minutes or kathirikkai becomes soft. Once it cooked, smash the kathirikkai. 
Kathirikkai / Brinjal Thokku is ready to serve with rice.
