Thengai Sadam / Coconut Rice


Ingredients
Cooked rice - 1 cup, Shredded coconut - 3/4 cup, Coconut oil - 1&1/2 tbsp, Mustard seeds - 1/2 tsp, Urad gram - 1 tsp, Bengal gram - 1 tsp, Peanuts - 1 tbsp, Red dry chilli - 4, Curry leaves, Salt


Method


Heat the pan with oil, add mustard seeds. When it splutter add bengal gram, urad gram & saute well until its turns golden brown. Add peanuts, red dry chilli, curry leaves and saute well.
Add shredded coconut, salt and saute well for a minute on the medium flame.
Add the cooked rice and mix well. Let it simmer for a minute on the low flame.
Thengai Sadam / Coconut Rice is ready to serve.
