Ennai Kathirikai Kuzhambu/Oil Brinjal Gravy

Brinjal - 9 (small size), Oil - 4 tbsp, Onion -1/2 chopped, Garlic - 5 cloves, Red dry chilli - 4, Tomato - 1, Curry leaves, Sambar powder - 2 tbsp, Tamarind water - 3 tbsp, Turmeric powder - 1/4 tsp, Pepper - 1 tsp, Cumin - 1 tsp, fenugreek seeds - a pinch, Salt

Get all the ingredients ready
Heat the pan dry roast the pepper, cumin and fenugreek seeds.

Transfer it in to the blender and blends in to the fine powder.

Heat the pan with oil, add brinjal and saute 5 minutes and keep aside.
In a same pan add garlic, onion, red dry chilli, curry leaves, salt and saute 2 minutes.
Add tomato, a pinch of turmeric powder, add sambar powder and mix well. Add 1/4 cup water and cook for 5 minutes.
Add tamarind water, cook 2 minutes and add pepper and cumin powder
and mix well.Finally, add the brinjal and cook 2 minutes.
Let it simmer on medium flame for 5 minutes.
Ennai kathirikai kuzhambu is ready to serve with rice.
